OLD FASHIONED PISTACHIO PUDDING CAKE - EVEN DADS CAN MAKE!
Ingredients:
1 Box Betty Crocker Super moist Vanilla Cake Mix
1 Package Pistachio Pudding Mix
1/2 cup veg oil
8 oz sour cream
1 tsp Vanilla Extract
4 eggs
One quick release or regular bundt pan - very very very well greased.
Pre heat the oven to 350F
Whisk together the pudding mix and cake mix in a medium bowl. Set aside.
In a much larger bowl, dump in oil, eggs, sour cream and vanilla extract. Whisk until combined (do not over mix)
Slowly add in the dry mix into the wet mix and stir until no lumps remain. Be gentle!
Pour in the pan. Bake in the pre heated oven for 40 min. Do a knife test to check if the center is cooked. If the knife returns dry, you are good to go.
Remove, let cool for 5 -10 min on the counter and then turn it upside down on a plate.
Serve room temperature with moms favorite morning beverage - tea, coffee or as in my case, Chai.
CECI PEA SALAD
This is how i created it...feel free to mix it, shake it and share it with love.

Ceci pea salad recipe:
1 Cup Sprouted Ceci peas (you can buy them sprouted or wash and soak them overnight and then tie in a moist cloth for 24 hour for sprouting
A couple tbs water.
salt to taste
1 Cup Red cabbage shredded, salted and marinated in the refrigerator for a couple of hours. Then press and remove the excess fluid
1/2 chopped onion
1 tbs olive oil
1 tsp fennel seeds
1 tsp sesame seeds
1/2 cup whole mint leaves
1/4 cup peanuts
1/4 tsp cayenne pepper (optional)
4 garlic cloves crushed (I know :))
3 tbs freshly squeezed lemon juice
1/2 c chopped cucumber
1/2 c chopped red pepper
goat cheese for topping (optional)
Shred and marinate the cabbage with salt.
Marinate the crushed garlic in lemon juice at room temperature
Warm the oil in a saute pan and add onions, fennel seeds, sesame seeds and saute the onions until transparent. Add the peanuts and mint and roast until the peanuts are pink. With a slotted spoon remove the onions and peanuts from the pan (the fennel and sesame seeds will stay behind).
Into the pan, add the Ceci peas, a couple tbsp of water cover and steam at med heat. You may need to add more water to cook them. You want them crunchy but chewable. Add cayenne, marinated garlic in lemon and toss well. cool to room temperature.
Layer the drained cabbage, Ceci peas, cucumber and peppers and top with onions. Or simply toss it all together. Tastes even better the next day
